PANCAKES RICE…CARNIVAL or FATHER’S DAY?

The tradition would like rice pancakes for father’s day, but  we like to eat even for CARNIVAL ….

Our recipe is simple, but be careful … it is necessary to  have time and patience!

Have fun and a good meal !!! … and if you like the idea you can replace rice with our PEARL SPELT … the pancakes will be very good !!!

INGREDIENTS:

-1 Kg RICE ORIGINAL

-1 Lt. of milk

-1.5 Lt. of water

- 8 ounces of SUGAR

-18 eggs

-1 Teaspoon baking powder

-3 Packets of vanilla cake

-1 Grated orange and juice

-1 Lemon grated

-1/2 Glass of Vin Santo

-extra virgin olive oil

- a pinch of salt

 

METHOD :

The day before to make the pancakes put to cook the rice with milk, water and a pinch of salt. Halfway through cooking, add the sugar. When all the liquid has been absorbed and the rice has become compact add the vinsanto and then let it cool.

The next day, when the rice is cool, add the 18 egg yolks, the grated orange and juice, grated lemon, vanilla and baking powder. Work it all. Whip the egg white until stiff and add to the mixture.

In a pan bring the oil to a boil and, with the help of a spoon, start frying the pancakes.

A liking sprinkle with sugar.
