This is an ancient variety of corn. It was once widespread throughout Italy, then only preserved by some Venetian farmers who later renewed its awareness and appreciation. Coincidentally we had a chance to taste this flour at a meal and were surprised to find the taste and quality was the same as it’s always been. We have produced this Marano corn for several years in our company, which is ground for us at Ancient Grifoni Mill, in Casentino. The result is a yellow flour with a unique flavor intense with fragrance. The flour is available in 500g packs.
